Midweek Libations would like to wish all its followers a very Happy New Year. The first cocktail of the year is an interesting winter warmer, borrowed from the cocktail bar of Claridge’s Hotel in London. Claridge’s, a high-class Art Deco era hotel in Mayfair, London, continues to be an excellent venue for discovering new cocktails and reinventions of old classics. Next time you are wandering the streets of London, battling the dreary grey cold, step into Claridge’s for a sip of luxury.
The “Sunday Roast” (suitable for vegetarians) is a warming blend of spiced rum and fruit juices with a savory plume of rosemary. In way, this cocktail is s a little like a wintery Caipirinha, with spiced rum instead of Cachaça, and the addition of extra fruit juice.
It is very easy to make this deliciously enticing cocktail. Fill a clean cocktail shaker with plenty of fresh ice. Add 3 measures of good quality spiced rum (The spiced varieties of Bacardi or Captain Morgan will do) and one measure each of freshly squeezed lemon juice, fresh apple juice (not from concentrate) and pineapple juice. Add a good tablespoon of simple syrup (or more if your juice is a little tart).
Shake well and strain into a chilled rocks glass. Garnish with a sprig of fresh rosemary.
This cocktail may easily be scaled up for larger parties or gatherings.
